One October weekend, I wanted to make apple crisps after we had made them in class. Unfortunately, I found out that I didn’t have any apples left. I still really wanted to bake something fall-like, so I went on Pinterest to get some ideas. When I saw a picture of these delicious looking pumpkin cookies, I just had to make them. I grabbed the ingredients and got to work.


Recipe

Prep Time: About 20 minutes

Bake Time: 15-18 Minutes

Cooling Time: 10 minutes

Total: 48 minutes

Servings: Around 35 cookies (may vary depending on cookie sizes)

 

Ingredients:

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon pumpkin pie spice

1/2 teaspoon salt

1 1/2 cups granulated sugar

1/2 cup butter (1 stick), softened

1 cup pumpkin puree

1 large egg

1 teaspoon vanilla extract

 

Preheat the oven to 350°F (175°C) and prepare a baking tray with parchment paper.

First, combine flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt in a medium bowl.

Then, in a separate mixer bowl, beat sugar and butter together. After the sugar and butter are well blended, beat in the pumpkin puree, egg, and vanilla extract.

Gradually beat the flour mixture into the pumpkin mixture until completely combined.

Next, put the mixture onto your baking tray using a tablespoon or an ice cream scoop and bake for 15-18 minutes. Cool the cookies on a cooling rack for about 10 minutes.

Finally, drizzle some icing on your cookies (optional)

The Process

Making pumpkin cookies was a simple process. It didn’t take me an extremely long time and they were very easy to make. I didn’t have nutmeg so I substituted it for pumpkin pie spice (as shown in the recipe), and it worked out really well. I made quite a few batches because of all the batter, so if you are looking for a small portion I would recommend cutting the recipe in half. The portion worked out for me because of how big my family is. To sum it all up, making pumpkin cookies wasn’t a difficult process.

My Thoughts

The pumpkin cookies had a lot of unique characteristics. The pumpkin flavor was noticeable without it being overwhelming. It was also a very soft, light, and fluffy cookie, and it had a cake-like texture. This may be a downside if you want more of a cookie-feel, but I personally loved it. In addition to that, the shape of the cookies may look weird because of the dough being batter-like. Overall, the pumpkin cookies tasted good, though they had some downsides, and I would definitely recommend them to anyone who loves fall flavors.
